We love all of those classic serving options, but we also wanted to push the envelope a little and try out something new. This recipe for ground beef and zucchini skewers does just that, while showcasing the delicious flavor and versatility of each ingredient! Slices of zucchini get stacked up next to seasoned ground beef, cooked on the griddle to sizzling perfection, and then wrapped up in a layer of double cheddar cheese. You've definitely never had zucchini skewers like this before!

- ½ cup cooked rice
- 1 tbsp chopped thyme
- 1 tbsp paprika
- 1 tsp chili powder
- 1 tbsp chopped rosemary
- salt & pepper to taste
- 10 slices of sharp cheddar cheese
- 10 slices of white cheddar cheese
