Roasting garlic cloves in olive oil allows them to become mild, caramelized, and tender enough to spread with a butter knife.

Covering peeled, whole cloves of garlic with oil and cooking them
until the cloves lose all of their bitterness and instead become delicate, slightly sweet, and buttery-soft, is a serious game changer. The added bonus is all the garlic infused olive oil that you get which can be used in cooking, marinades, salad dressings or just as a dip for crusty bread

**When I make this garlic, I always buy the pre-peeled cloves, it’s makes it soooo much easier to do!
